#61 Let Them Eat Cake





Let them eat cake!  That is, pancakes - for supper.

Having had grandparents who ate pancakes on Shrove Tuesday (or "Pancake Day"), I know that pancakes for supper can actually be a refreshing change.

When I find myself at a loss as to what to make, pancakes are the answer!  Quick, easy, and versatile, PLUS, the kids LOVE them as a treat. 

You will surely find in your kitchen: bacon, sliced ham (that can be fried up), sausages, or perhaps some Prem or Spam to fry (Spam is a favourite of the locals in Hawaii) to accompany your dinner cakes.

Mix it up a bit - instead of just butter and syrup as a topping use the fresh fruit you have on hand.  We love banana slices cooked into our pancakes.  Fried apple then stirred into the batter with a bit of cinnamon is very good.  Just the other day I decided to make strawberry syrup with some of my frozen berries I keep on hand for our smoothies.

Easy Strawberry Syrup (and then Jam).
 
*  8 large strawberries (or 1 pint)
* 1/4 - 1/3 cup of white sugar
* 1 tsp. vanilla
 

1.Wash  berries and remove stems; cut large berries in half or roughly chop them.

2.Combine strawberries, sugar, and vanilla in a saucepan. Cook over medium-high heat, stirring occasionally. The mixture will sizzle for a while, but then juice will begin to form. Continue stirring; mash a few of the strawberries to help produce the syrup. Cook for about 15 minutes until sauce thickens.

3.Remove from heat.

Serve hot over pancakes and then chill the rest in the refrigerator for fresh strawberry jam.
